In recent years, gastronomy has increasingly asserted itself as an art form, in which the act of eating becomes an ephemeral work that combines flavour and aesthetics, as well as a performative (ritual), contextual, and social dimension. It differs from other arts by including an intimate and unrepeatable aspect: the experience of ingestion and of taste felt within one’s own body.
It is within this context that the project Comer com os Olhos emerged. Over the course of three artistic residencies in the summer of 2025, we witnessed the meeting of visual artists and gastronomes, and the emergence of a new creative language. This language turned “scarcity,” the central theme of this first edition, into an unexpected abundance. A lack of resources became a profusion of creativity, and the absence of established formulas enabled the invention of new ways of making, thinking, and sharing. As Ferran Adrià said, “cooking is an act of love, an act of giving,” and it was this generosity that guided every experience, proving that both art and gastronomy are only completed through the participation of the other.
